Say hello to your favorite summer cocktail that is so refreshing you may forget you are drinking an adult beverage. Then the buzz kicks in and the hit of spicy jalapeño starts to tickle your tongue. Tequila Sañdia, is my version of a spicy watermelon margarita (skinny of course). Freshly juiced watermelon hits the class with the juice of one lime, a splash of fresh orange, tequila (duh), over ice and shaved frozen jalapeño and fresco chili. It’s fresh, it’s spicy, it’s watermelon!
TEQUILA SAÑDIA
Makes 2 margaritas
2 cups of freshly juiced watermelon
3 ounces of tequila of choice
The juice of 2 limes
1/4 cup of freshly squeezed orange juice
Shaved frozen jalapeño and fresco chili pepper (to taste)
2 mint leafs
Tajín seasoning and salt
Start by prepping your margarita classes by lining the rims with lime juice and then dipping them into a mixture of tajín and salt. Next, juice your watermelon. You can do this by running it through your juicer, or even a blender will work fine. Make sure you strain it afterwards to remove any pulp or foam. Add the watermelon juice, tequila, lime and orange to a cocktail shaker and shake well. Pour overtop ice to your margarita classes. The cherry on top is the spice! Grab your frozen peppers from the freezer, and using a lemon zester, zest the skin of the pepper on top of your cocktail. Add a mint leaf to garnish and enjoy.
